Pre heat oven to 200°C
Quarter each sheet of filo pastry. Cut the salmon into inch squares with a sharp knife. Put one square of salmon at the end of each piece of filo pastry and put ½ teaspoon of Thai jelly on the top of the salmon. Brush the surrounding filo with melted butter then roll up the salmon twice in the pastry. Butter the filo pastry either side of the salmon and fold the sides in then finish rolling upwards to make a parcel. Brush the top with a little more butter and bake in the oven for 15 mins.
Serve with more Thai jelly.
