Ingredients:
2 large field tomatoes, cut in bite size pieces
1 large English cucumber, thinly sliced
1 small red onion, finely chopped
1 bunch of fresh dill
Vinaigrette
1/4 cup olive oil
1/8 cup white wine vinegar
1 1/2 teaspoon sugar
1 clove garlic, crushed
1 teaspoon fresh dill, chopped
1/4 teaspoon sea salt
1/8 teaspoon fresh ground pepper
Method:
Add all ingredients for the vinaigrette to a mason jar and shake well. Set aside.
Thinly slice the cucumbers and add to a medium salad bowl. Core and chop tomatoes and red onion and add to the bowl. Add fresh pieces of dill, salt and pepper. Shake vinaigrette and pour over salad. Toss and serve.
I love this salad! I was looking for the red potato and egg recipe cause it is another one of my favorites. Lets be real, I have a lot of favorites. Wish I still lived in Unionville so I could get these salads weekly
