Arctic Char Filets

2 tablespoons Extra Virgin Olive Oil

Kosher salt

Black pepper

Fresly squeezed Lemon Juice

Heat two tablespoons of extra virgin olive oil in a grill pan or skillet over medium-high heat. Season arctic char with kosher salt and black pepper. Cook fillets on grill pan skin side up until lightly browned, 3 to 4 minutes. Flip filets and continue to cook until fish flakes easily with a fork, 3 to 4 minutes more. Remove from heat. Delicious served on a bed of greens seasoned with Arctic Char pan juices and grape tomato halves. Squeeze fresh lemon on top of Arctic Char before serving.
