1 cauliflower – about 2 1/2 lbs

2 cups shredded cheddar cheese

1/2 cup Hellman’s Mayonnaise

2 tbsp Dijon mustard (add extra flavour with 3 tbsp)

1/4 cup grated parmesan cheese

2 tbsp grated parmesan cheese

1 tsp paprika for garnish

  1. Preheat the oven for 350F
  2. Core cauliflower and remove the outlives, leaving heads intact
  3. In a large pot, for 20 minutes, steam cauliflower until tender
  4. Once tender, transfer cauliflower an oven-proof dish
  5. In a small bowl, combine cheddar cheese, mayonnaise, mustard and parmesan cheese
  6. Spread mixture over the cauliflower
  7. Bake for 15-20 minutes or until you see the top bubbling and lightly browning
  8. Garnish the dish with a sprinkle of paprika
