Grilling has become a year round way to cook. Partly for the convenience and also because it has been discovered to be one of the healthiest ways to cook.
The flank steak is a relatively lean cut of meat with lots of flavor. The quickest and easiest way is to buy it pre-marinated. Grill it whole and allow it to rest before cutting. Slice it across the natural grain.
1lb marinated Village Grocer Flank Steak
6 ounces organic mixed lettuce
6 ounces blue cheese, crumbled
1 lb bacon, cooked and crumbled
¾ cup toasted almond silvers
1/3 cup finely chopped red onions
3 Roma tomatoes, finely chopped
citrus dressing (recipe below)
Grill steak to seven minutes per side for medium rare and let it rest for 10 minutes while covered. Cut into small cubes; set aside.
Place the mixed lettuce in bowl. Top with steak, blue cheese, bacon, almonds, onions and tomatoes. Drizzle with Citrus dressing.
Citrus Dressing:
1 tbsp minced shallot
6 tbsp citrus juice
½ cup olive oil
salt and pepper to taste
Combine dressing ingredients in a small bowl or pitcher. Refrigerate or use immediately.
Serves 4 to 6
