375 ml (1 1/2cups) cooked Du Bois Wild Rice, cold
250 ml (1 cup) cooked, peeled shrimp
2 tomatoes
2 red apples, diced
2 green onions
1 celery stalk, diced

Wash wild rice thoroughly.  Add 125 ml (1/2 cup) wild rice to 375 ml (1 ½ cups) boiling water.  Cover and simmer for 45 minutes or until tender.  Uncover, fluff with a fork and simmer for five minutes more.  Drain any excess liquid.  Cool.

(Note: wild rice can be cooked ahead of time, refrigerated or frozen then steamed thus allowing for advance preparation and eliminating waste).  Mix together rice, tomatoes, apples, onions and celery.  Season and add mayonnaise to taste.  Add shrimp and toss.
