Queen Bees in the Village
A family favourite, this quick and easy recipe turns leftover turkey into a delicious soup to warm the body and soul.
Ingredients:
1 tbsp. olive oil
1 large onion, diced
2 large carrots, peeled and chopped into half moons
2 large celery ribs, chopped
2 cloves garlic, minced
5 cups of chicken broth
3 stems of fresh thyme
2 cups leftover turkey white or dark meat chopped into bitesize pieces
1/4 cup of uncooked rice
1 tbsp. of Better Than Bouillon Turkey flavour* 
juice and zest of 1 lemon
Salt and Pepper
Method:
Heat the olive oil in a large pot on medium heat.  Add the onion, carrots and celery and sauté for 10 minutes until softened.  Add the garlic and continue to cook for another minute.  Add the chicken broth, thyme, turkey and rice. Simmer for 20 minutes until the rice is soft.  Add the Better Than Bouillon and stir until completely dissolved .  Add in the lemon juice and zest and season with salt and pepper.  Continue to cook for another 5 minutes.  Remove the thyme stems and serve.
*Better Than Bouillon gives an added robust and rich flavour to the stock.  If not available substitute chicken or vegetable.
