4 trout fillets
2 tablespoons fresh lime juice, and slices
2 teaspoons dark sesame oil
1 tablespoon fish sauce
2 teaspoon crushed red pepper
1/4 cup fresh cilantro
Preheat oven to 450 degrees. Combine lime juice, fish sauce, sesame oil and crushed red peppers in a small bowl, stir well. Arrange trout on a pan, coated with cooking spray. Brush half of the juice mixture inside the fish. Bake for 5 minutes. Brush remaining juice mixture over fish. Bake an additional 5-10 minutes, or until flakes easily when tested with a fork. Sprinkle with chopped cilantro, garnish with lime slices and cilantro sprigs if desired. Great served with jasmine rice, and asparagus.
