1 tbsp oil
1 lb lean ground pork
6 oz sliced purple onion
1 to 6 small fresh Thai Chilies, chopped (this will determine spice level)*
1/2 oz very thinly sliced ginger
4 oz Thai Kitchen Premium Fish Sauce
4 oz lime juice
3 oz crushed unsalted dry roasted peanuts
2 oz chopped green onion
1/4 cup chopped cilantro (optional)
lettuce leaves

In a wok or large frying pan, heat oil on high temperature and sauté pork. Let cool and drain all excess liquid.

In a large mixing bowl, mix cooked pork, onions, chili*, ginger, fish sauce and lime juice. Mix together well. Add the peanuts, green onions and cilantro. Transfer to a serving bowl.

Place the lettuce leaves on a serving plate. Serve by placing a small portion of pork mixture into each lettuce leaf, wrap and enjoy!

* The chilies are optional as they will determine the spiciness of the salad. Start with a small amount of chili and increase to desired spice level.
