Cauliflower – The New “IT” Vegetable

Packed with vitamins, nutrients and antioxidants, it helps the body to detoxify and manage inflammation.  It has very few calories – 1 cup of cauliflower is only 27 calories and contains 2 grams of protein and fiber. This slows down the digestion and keeps you fuller longer.

Parmesan-Roasted Cauliflower

This is one of our favourites cauliflower recipes. So easy as all ingredients are baked together on one sheet pan.

Ingredients

1 head cauliflower
1 sliced medium onion
6 thyme sprigs
5 unpeeled garlic cloves
3 tablespoons olive oil
Kosher salt
Freshly ground black pepper
3/4 cup grated Parmesan

Method

Preheat oven to 425°F. Cut 1 head cauliflower into florets and place into a large bowl.  Add the sliced onion, thyme and garlic cloves and toss with the olive oil.  Spread out the vegetables in a single layer on a large rimmed baking sheet. Season with salt and freshly ground black pepper. Roast for 20-25 minutes, tossing occasionally, until almost tender.  Remove from oven and sprinkle with grated Parmesan, toss to combine, and roast until cauliflower is tender, 10-12 minutes longer.
