1 1/2 pounds pacific halibut steaks, cut into madallions

2 pounds bok choy, sliced

1 pound corn kernels

salt and pepper

2 oz ginger, minced

2 oz garlic, minced

4 oz canola oil

2 oz fresh cilantro, chopped

4 oz scallions, thinly sliced

4 oz Chinese oyster sauce

Season the halibut well with salt and pepper. Sear in a pan with hot oil until cooked. In a large wok or skillet, heat the remaining canola oil and quickly stir fry the ginger, garlic, and scallions. Add the bok choy and stir fry quickly until it just begins to wilt. Add the corn kernels and cook for another minute. Drizzle in the oyster sauce and mix to coat evenly. Serve the seared fish over the stir fried vegetables.
