Fresh Wild Sockeye Salmon Fillets

2 tbsp Canola Oil

2 tbsp grated lemon peel

1/2 tsp ground coriander

1/2 tsp ground cumin

1/4 tsp salt, and freshly ground pepper

Cilantro, chopped

Zesty Tartar Sauce

 

Combine oil, lemon peel, cumin, coriander, salt, pepper, in a frezzer bag. Add salmon fillets to bag and coat with oil mixture. Let stand for minimum 15 minutes. Remove salmon from seasoned oil, and discard any remaining oil mixture. Grill salmon, over medium heat, turning once to sear both sides of fillets, for 5 minutes per side or until salmon flakes easily with fork. Sprinkle with chopped cilantro and serve with Zesty Tartar Sauce.

To create your own tartar sauce, combine 1/4 cip of Mayonnaise, with 2 tbsp of Sweet Green Relish, 1/8 tsp of Cayenne Pepper and a pinch of salt. Cover and refrigerate until serving.
