Ingredients:
2 lbs Haddock fillets
1/2 cup onion
1/4 cup chopped celery
3 tbsp butter
1/2 cup fresh mushrooms
2 cups bread crumbs
1/8 tsp pepper
1 pinch tarragon
1 pinch dried rosemary
1 tbsp lmon jiuce
4 plum tomatoes, sliced
1 tsp salt
In a large skillet, saute onion and celery in butter for three minutes or until tender. Add mushrooms; saute one minute longer or until tender. Remove from the heat; stir in the bread crumbs, salt, pepper, tarragon and rosemary if desired.
Place the fillets in a greased baking dish. Sprinkle with lemon juice. Spoon the bread crumb mixture onto fillets. Top with tomatoes. Bake, uncovered, at 375 degrees for 25-30 minutes or until fish flakes easily with a fork!
