Erin, our resident florist, is sharing her favourite vegetable dish that her mom makes for every special occasion. Quick and easy – a family favourite. Give it a shot!
Ingredients:
1 can cream of mushroom soup
2 heaping tablespoons of mayonnaise
1 cup grated cheddar cheese
5 or 6 cups of broccoli flowerettes
Toppings:
2 cups of bread crumbs
½ cup parmesan cheese
2-3 tablespoons melted butter
Directions:
Preheat oven to 350 degrees F. Steam the broccoli until partially cooked (still firm). In one bowl, mix broccoli with soup, mayo and cheese. In another bowl combine the topping ingredients together. Pour broccoli mixture into a casserole dish, top with bread crumb mixture. Place in oven for 15-20 minutes, or until completely heated through and topping is golden brown.
