500 ml cooked Du Bois Wild Rice
125 ml sliced green onion
125 ml shredded carrot
25 ml finely chopped parsley
1 small Granny Smith apple, diced
50 ml coarsely chopped walnuts
Curry Lemon Dressing:
50 ml salad oil
50 ml lemon juice
15 ml sugar
25 ml salad dressing or mayonnaise
1 clove garlic, minced
2 ml curry powder, or to taste
In a salad bowl, combine wild rice, green onion, carrot, parsley, and apple.
For dressing, place all ingredients in a jar with a tight fitting lid; shake to combine. Pour over wild rice salad and toss; chill. Stir in walnuts and serve.
Note: add chopped cooked chicken or turkey to make this a main dish salad.
