Cherry Clafouti
Ingredients:
1 pound Fresh Cherries (rinsed & pitted)
1/2 cup All-Purpose Flour
1 teaspoon Baking Powder
3 Eggs
1/4 cup White Sugar
1 cup Cream (half & half works well)
1 teaspoon Vanilla Extract
1/2 teaspoon Almond Extract

Method:
Butter the bottom of an 8 inch baking dish.  Place the cherries evenly in the bottom. In a medium bowl, combine the flour, baking powder, eggs, sugar, cream, vanilla and almond extract.  Using an electric mixer, beat the ingredients together until fully blended, approximately 1-2 minutes.  Pour the batter over the cherries. Bake for 20-25 minutes.  Check doneness by inserting a toothpick into batter to make sure it has set. Cook longer if toothpick does not come out clean.
