1½ cups all-purpose flour
½ cup finely shredded cheddar cheese
1/3 cup quick-cooking rolled oats
2 tbsp sugar
2½ tsp baking powder
¼ tsp salt
1 egg, beaten
¾ cup milk
1/3 cup cooking oil
¾ cup apple, finely peeled and chopped

Grease 12 muffin cups; set aside.  In a medium mixing bowl combine the flour, cheese, rolled oats, sugar, baking powder, and salt.  Make a well in the center of the dry mixture; set aside.

In another medium mixing bowl combine the egg, milk, and cooking oil.  Add egg mixture all at once to the dry mixture.  Stir just till moistened (batter should be lumpy).  Fold in apple.

Spoon batter into the prepared muffin cups, filling each 2/3 full.  Bake in a 400 degree F. oven 18 to 20 minutes or till golden.  Cool in muffin cups on a wire rack for 5 minutes.  Remove from muffin cups; serve warm.
