2 (6-8 ounce) Butterfish Fillets

Citrus Salsa ingredients:
2 oranges, peeled and chopped in ¼ inch pieces
½ grapefruit, peeled and chopped in ¼ inch pieces
1 lime, peeled and chopped in ¼ inch pieces
½ yellow bell pepper, chopped
1 red bell pepper, chopped
2 tablespoons fresh cilantro, chopped
3 tablespoons rice wine vinegar
2 tablespoons sugar

Combine all the salsa ingredients. (This can be stored in the refrigerator in an airtight container up to one week.)

Broil or barbecue the Butterfish fillets approximately 8 minutes per side, or until done.

To serve, spoon the citrus salsa over the Butterfish and serve with rice and fresh vegetables.
