Karen discovered a wonderful Mexican restaurant called La Morenita in Palo-Alto, California over 15 years ago which serves these amazing nachos that look like a blooming rose. She has been making them ever since, and is excited to share this easy recipe with you.
1 bag of tortilla chips (round)
1/4 cup of salsa
1/2 pint of cherry tomatoes
black olives, sliced
1/2 cup Monterey Jack cheese, shredded
1 can refried beans
1/4 cup jalapeño peppers, sliced
Spread the refried beans onto the bottom of a round oven-proof dish.
Spread the salsa on the top of the refried beans and then place the chips in a circular pattern starting in the centre of the dish.
Top with cherry tomatoes, olives and jalapeño peppers.
Sprinkle with cheese and bake at 375 degrees for 10 to 15 minutes until the cheese is melted and the bean dip is warm.
