Use a 10 inch deep pie dish

¾ to 1 cup sugar (one-half brown sugar and one-half white sugar)
¼ cup flour & 2 tbsp flour
½ tsp ground nutmeg
1 to 1½ tsp ground cinnamon
a dash of salt
7 to 8 cups thinly, sliced pared tart apples (about 7-8 medium apples)
3 tbsp butter

Heat the oven to 425 degree F.  Prepare pastry.  Mix sugar, flour, nutmeg, cinnamon and salt.  Stir in apples.  Pour mixture into pastry-lined pie plate: dot with butter.  Cover with top crust.  Cut slits on the top to allow steam to escape.  Brush top pastry with milk and sprinkle with sugar.  Cover edge with a 3 inch strip of aluminum foil; remove during last 15 minutes.  Bake until browned and bubbling (40-50 minutes).
