For cake:
3 apples, peeled and sliced
1 cup sugar
1 egg
1 cup flour
¼ cup butter, softened
1 tsp cinnamon
½ tsp nutmeg
1 tsp baking soda
¼ tsp salt
½ cup chopped walnuts (optional)

For caramel sauce:
¼ cup butter
½ cup white sugar
½ cup brown sugar
½ cup whipping cream
1 tsp vanilla

Cake:  Preheat oven to 350 degree F.  In a large bowl, cream butter with sugar.  Beat in egg.  Stir in flour, cinnamon, nutmeg, baking soda, salt and walnuts.  Fold in the apples.

Spray an 8-inch square pan with a non-stick vegetable oil spray.   Pour mixture into pan.  Bake for 30 to 40 minutes in oven or until the cake is done. (Insert a toothpick into the centre of the cake.  If it is done, the toothpick should come out clean and dry)

Caramel Sauce:  In a heavy sauce pan, melt butter over a low heat.   Whisk in the remaining ingredients.  Bring to a boil, whisking constantly.  Continue for about 5 minutes or until sauce has thickened.  Remove from heat.  Serve over cut apple cake squares.
