3 cups flour
1 ½ tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1 tbsp vanilla
2 cups sugar
1 cup oil
3 eggs
2 cups apples, (peeled and diced)
½ cup walnuts, chopped
1 tsp flour

Grease the bottom and ½ inch up sides of two loaf pans; set aside.  In a medium mixing bowl combine the flour, cinnamon, baking soda, salt and baking powder; set aside.  In another medium mixing bowl, beat the eggs.  Add the sugar and oil to the egg mixture.  Mix well.  Add the vanilla and the dry mixture to the egg mixture.  Stir in the apples.  Mix the walnuts in a tsp of flour and add to the batter.  Pour into the loaf pans and bake in a preheated 350 degree F. oven for 1 hour.  Cool the pans on a wire rack for 10 minutes before removing bread from pan.
