It’s pumpkin season! Karen and Linda have created a delicious creamy pasta made with pumpkin purée and the Village Grocer sage and onion sausages making a meal that is simple but so satisfying.

Ingredients:
6 Village Grocer Sage and Onion Sausages

Pasta Sauce:
1 tablespoon (15ml) butter
2 cloves garlic, minced
1 cup (245g) pumpkin purée
½  cup (120ml) half and half cream
½  cup (120ml) vegetable stock
¼ cup (23g) freshly grated Parmesan cheese
1 tablespoon (15ml) fresh sage, chopped
pinch of cayenne pepper
Kosher salt
freshly ground pepper
8 ounces (250g) bowtie pasta

Fried Sage Leaves:
12-16 whole sage leaves, stems removed
1 tablespoon (15ml) olive oil
1 tablespoon (15ml) butter

Method:
1. Slice each sausage on the diagonal into ½” (1.25cm) pieces. Add 1 teaspoon (5ml) of olive oil to a fry pan and bring to medium-high heat.  Add the sausages and sear each side, flipping once. Reduce heat to medium and continue to cook until done. Set Aside.
2. Fill a large pot with water and add 1 teaspoon (5ml) of salt once it starts to boil. Add the pasta and cook according to directions until al dente. Once cooked, reserve 1 cup (240ml) of pasta water before draining.
3. While the pasta is cooking, make the pumpkin sauce by melting the butter in a large skillet over medium-low heat. Add the garlic as soon as the butter starts to foam. Cook for 1-2 minutes until soft and fragrant.  Do not burn. Add the pumpkin purée, cream and vegetable stock to the pan and stir to combine.  Add in the Parmesan, fresh sage and cayenne pepper.  Season with salt and pepper to taste.  Simmer on low for 10 to 12 minutes, stirring occasionally.
4. Fold the pasta into the sauce in the skillet until fully coated. If the sauce is too thick, add in some reserved pasta water until the sauce has creamy consistency.  Fold in the sliced cooked pieces of sausage.
5. Plate the pasta on a large platter and top with fried sage leaves and additional Parmesan cheese. Serve immediately.
Fried Sage Leaves: Add olive oil and butter to the bottom of a skillet and heat over medium high heat till hot and oil is shimmering. Add 6-8 sage leaves at a time and cook for approximately 5 seconds. Gently remove leaves and transfer to a paper towel.  Repeat with the rest of the leaves until all are fried. Garnish pasta.
