Asparagus season just started, and I celebrated by making my Asparagus Mushroom Quiche for lunch! These are the ingredients and steps, i hope you guys try it 🙂 . . homemade pie crust asparagus stems (sautéed) mushrooms (sautéed) leeks (sautéed) eggs -milk or cream (i used a mix of both) cheese (i used cheddar and parm) salt & pepper tomatoes for garnish asparagus tips halved for garnish Steps: 1. Blind bake pie crust 2. Shred cheeses 3. Prep and sauté veggies 4. Mix eggs + milk + S&P 5. Bake in the quiche crust at 350 for 55 mins 6. Cool summer greens salad 🥗 The perfect weather to cool down with a nice salad. . Asparagus @welshbrosfarms, arugula, baby kale, cucumbers, tomatoes, blueberries, micro basil, a a bit of spearmint, Meredith dairy garlic goat cheese, garlic infused oil as dressing and prosciutto. Steam the asparagus for 5 mins, chop it into bite size pieces and mix it in with all the other ingredients! Simple yet refreshingly good! 😊. . #myVGrecipe @thevillagegrocer . Asparagus and Brie Puff Pastry

Asparagus and Brie Puff Pastry Take one bunch asparagus – toss with oil and salt and pepper to taste. Roll out the pastry sheet on a floured surface and cut into four squares. Place a piece of Brie and and a handful of of asparagus on each square and pinch the two corners together. Brush each pastry with egg and bake 20-25 minutes at 375 degrees. ROASTED ASPARAGUS – Asparagus roasted with olive oil, fresh lemon juice, red wine vinegar, fresh chopped parsley, dried oregano, minced garlic, salt and pepper. I hope i’m not too late for the @thevillagegrocer #myVGrecipe contest this week! When it comes to asparagus I keep it simple: olive oil, sea salt, lemon zest; roast for 10 mins in a 400º oven, and then top with freshly grated parm. Purple Asparagus Mafalda Pasta 🤩 We recently discovered purple asparagus and loving it! Purple asparagus has a sweeter flavour than their green cousins. It pairs great as a veggie side dish on its own pan fried with cherry tomatoes, peppers and zucchini and drizzled with olive oil. We also added purple asparagus to mafalda pasta combined with freshly picked from the garden parsley, garlic, sundried tomato pesto and melted bocconcini.
