¾ cup Renée’s Gourmet Original Poppy Seed Dressing & Dip
2 cups grated zucchini
2 1/2 cups flour
1 cup Sugar
1 tsp Baking Soda
¼ tsp Baking Powder
½ tsp Salt
2 eggs, whole
¼ cup vegetable oil
1 tbsp vanilla Extract
Sift dry ingredients together and set aside. Combine eggs, Renée’s Gourmet Poppy Seed Dressing, oil and vanilla. Add the grated zucchini to the dry ingredients and toss. Add the liquid ingredients, stirring just until combined.
Grease a muffin tray using a little butter, add a dusting of flour to the muffin tray and scoop the muffin mix into each reservoir. Bake at 350 degrees until golden brown, approximately 25 minutes. Serve warm with a pat of butter and Poppy Seed dressing.
