It’s so easy peasy to make this delicious soup when you use leftover ham. All the ingredients are combined together in the slow cooker and ready in 8 hours.
Ingredients:
2 cups dried green split peas
2 cups fully cooked ham, cubed into bite size pieces
1 large onion,  finely chopped
1 cup carrots, diced
1 cup of celery, diced
2 garlic cloves, minced
1 large bay leaf
1/2 teaspoon dried thyme
5 cups, reduced-sodium chicken broth
1 cup water
Method:
Rinse the dried split peas and combine with all the other ingredients in the slow cooker. Cover and cook on low until peas are tender, approximately 8 hours.  Stir occasionally.   Add more water and cook longer if needed to create a creamier soup.  Remove bay leaf and season with salt and pepper to taste.
