1/4 cup margarine
1/2 cup honey
2 eggs
1 cup cooked Rice Select’s Jasmati Rice
1 cup buttermilk
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
Beat margarine and honey till light. Add eggs and rice; beat 3 minutes. Add milk and dry ingredients. Stir with spoon only until blended. Fill greased muffin pan 2/3 full. Bake at 400° F. for 20 minutes or until done. Remove from pan at once.
Makes 1 dozen muffins.
