2 x 1lb Pork Tenderloin

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons Extra Virgin Olive Oil

1 cup Apple Sauce, Eden’s Organic

¼ cup brown sugar

2 tablespoons honey, Village Grocer’s Wild Flower

3 tablespoons Dijon Mustard (Maille)

2 springs of Rosemary, roughly chopped


  • Preheat oven to 350 degrees
  • Sprinkle pork with salt and pepper
  • In a large skillet heat oil
  • Brown the pork on all sides
  • Place pork in a roasting pan
  • Combine apple sauce, brown sugar, mustard and honey together. Spread over pork
  • Top with rosemary and bake uncovered for 1 hour until cooked through.


Recommended internal temp for a pork roast is 145 degrees for medium-rare, followed by a 5 minute rest before serving.
