Ingredients:
2 x 1lb Pork Tenderloin
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons Extra Virgin Olive Oil
1 cup Apple Sauce, Eden’s Organic
¼ cup brown sugar
2 tablespoons honey, Village Grocer’s Wild Flower
3 tablespoons Dijon Mustard (Maille)
2 springs of Rosemary, roughly chopped
Method:
- Preheat oven to 350 degrees
- Sprinkle pork with salt and pepper
- In a large skillet heat oil
- Brown the pork on all sides
- Place pork in a roasting pan
- Combine apple sauce, brown sugar, mustard and honey together. Spread over pork
- Top with rosemary and bake uncovered for 1 hour until cooked through.
Recommended internal temp for a pork roast is 145 degrees for medium-rare, followed by a 5 minute rest before serving.
