6 tomatoes, peeled, seeded and cut in chunks
1 onion, chopped
4 cloves garlic, chopped finely
1½ cups corn kernels
2 peppers (one green and one yellow)
1 cucumber, peeled, seeded and cut in chunks
¼ cup red wine vinegar
2 tbsp olive oil
1½ cups tomato juice

In a food processor, puree together tomatoes, garlic and onions.  Place puree tomato mixture into a large bowl.  Add pepper to processor and pulse until finely chopped, add to the tomato puree.  Process cucumber until finely chopped.  Stir cucumber mixture and corn into tomato puree.  Add vinegar and oil.  Put in the tomato juice.  Add salt and pepper to taste.

Serves 6
