Season the filets with sea salt, freshly ground pepper, and a bit of fresh garlic. Grill them to just under the desired degree of doneness and place in a low oven (150 degrees). For the sauce, you can use any that you wish, but we suggest a light Brandied Three Peppercorn Sauce (which you can find in the freezer section).
