This is one of my favorites to celebrate family day!
Ingredients:
Caramel Layer
1 cup yellow sugar
1/4 pound butter
1½ tablespoon water
fresh pineapple, sliced
maraschino cherries
Cake Batter
1/3 cup butter 1 cup sugar
1¼ cup all purpose flour 1 egg
½ teaspoon salt ¾ cup milk
1 teaspoon grated lemon zest a dash of vanilla
1¼ tablespoon baking powder
Line an 8-inch pan with parchment. Combine caramel layer ingredients including yellow sugar, butter, and water in a pot and cook until sugar is dissolved. Pour onto the bottom of the lined pan. Place sliced pineapple rings and maraschino cherries in a beautiful pattern atop the caramel. Next the cake mix! Cream butter and sugar until light and fluffy. Add egg. Add sifted dry ingredients alternating with milk. Add lemon zest and vanilla. Pour on top of caramel mixture and bake at 325 degrees F for 45 minutes. Check doneness. It may require another 10-15 minutes depending on your oven. Let cool. Turn upside down on a cake plate. Let the cake sit for a few minutes and then remove the pan. Serve slightly warm.
