There’s nothing quite as comforting as a bowl of homemade soup. It never fails to warm us up on chilly days and is the perfect sidekick to elevate any meal.  For the heartiest soup of the bunch, our easy Hubbard squash soup is a fan favourite. It’s a great option to help combat colds and liven up your next dinner party!

Hubbard Squash Soup

Ingredients:

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1 medium carrot, chopped
  • 2 medium potatoes, cubed
  • 1 medium hubbard squash, peeled, seeded and cubed
  • 1 cont. chicken stock
  • salt and pepper to taste

Instructions:

  1. In a medium-heated pot, start to melt the butter
  2. Add the onion, celery, carrot, potatoes and squash, stirring for 5 minutes, or until ingredients are lightly browned
  3. Pour in chicken stock so that the vegetables are covered
  4. Add in 1 tsp. of salt and bring to a boil over high heat
  5. Reduce the heat to a low simmer, cover, and cook 40 minutes, or until all vegetables are tender to develop the soup’s flavour
  6. Transfer the soup to a blender and blend until smooth
  7. Return back to the warm pot, and mix any remaining stock until you obtain your preferred consistency 
  8. Season to taste with salt and pepper
