Our Queen Bees wanted to share their quick and easy recipe for Skillet Blackberry Crumble:
Ingredients
Crumble Topping:
3/4 cup all purpose flour
3/4 cup light brown sugar, firmly packed
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 cup large flake rolled oats
1/2 cup cold butter, unsalted, cut into 1/2 inch cubes
Berry Filling*
4 cups blackberries (2 pints)
1/4 cup white sugar
2 tablespoons cornstarch
1/2 teaspoon vanilla extract
Method:
Preheat the oven to 350F.
To make the topping, start by combining the flour, brown sugar, cinnamon, salt and rolled oats together
in a large bowl.  Add the butter.  Using a pastry blend or fork, combine with dry ingredients to form coarse crumbs.
Set aside.
In a large bowl, gently toss the blackberries, sugar, cornstarch and vanilla together.  Place into a 10” cast iron skillet.
Cover evenly with the crumble topping.
Bake for 35-40 minutes until the filling is bubbly and the topping is golden brown.
*You can use 4 cups of any of your favourite berries, apples or peaches to make a delicious fruit crumble.
