1 large apple, peeled, cored and diced
1 tsp lemon juice
1 ½ tsp cinnamon
2 ½ cups all-purpose flour
4 tsp baking powder
1/3 cup white sugar
1/3 cup brown sugar
2 eggs
1 cup milk
½ cup butter, melted
A pinch of nutmeg

Combine diced apple with lemon juice, cinnamon and nutmeg.  Set aside.  Combine flour, baking powder, brown sugar, and white sugar in a large bowl.  Mix well.  In another bowl, beat eggs with milk and melted butter.   Pour wet ingredients over dry ingredients and combine.   Stir until blended.  Stir in reserved apple mixture.  Spoon muffin mixture into buttered muffin tins.  Bake in preheated 400 degree F oven for 25 minutes.

Makes 12 muffins
