Orange Slices with Olive Oil
Ingredients (For 6 people):
6 sprigs of fresh mint
5 pinches of cinnamon
1 tbsp of rum or other alcohol
4 tbsp of Carli Extra Virgin Olive Oil
2 tbsp of Honey
5 oranges
Time required: 15 minutes preparation time + 1 hour refrigeration
Preparation
Rinse and take the leaves off the mint sprigs then mix with the oil. Add the cinnamon and honey. Marinate for 30 minutes. Quickly peel the oranges and cut into slices. Lay them in a dish and pour the rum over them. Cover with the oil marinade and cool in the fridge for 1 hour. Decorate with the mint leaves. Serve this dessert cold but not frozen so that you can fully enjoy the sharpness and delicacy of its flavors.
Savory Fig Cake with Diced Bacon
Ingredients (For 6 people):
3 eggs
1¼ cups of flour
1 tbsp of baking powder
½ cup of Carli Extra Virgin Olive Oil
½ cup of milk
¼ pound of soft figs
½ pound of diced bacon
¼ pound of grated Gruyere cheese
2 tbsp of mascarpone, pepper.
Time required: 15 minutes preparation + 30 minutes cooking time
Preparation
In a large bowl, mix the eggs, flour and baking powder. Slowly add the oil, then the previously heated milk. Add the Gruyere, the diced bacon and the figs cut into pieces then the mascarpone. Season with pepper and mix well. Pour this preparation into an oiled and floured cake tin and cook for 30 minutes in an oven preheated to 350°F. Turn out the cake and leave to cool. This cake, with its original sweet and savory flavor will make an excellent meal in itself when served with a green salad.
Chicken with Sweet White Wine
Ingredients (For 6 people):
6 chicken thighs
4 thinly sliced onions
¾ cup of sweet white wine
2 garlic cloves
2 tbsp of honey
12 dried apricots
4 tbsp of Carli Extra Virgin Olive Oil
Salt and pepper
Time required: 5 minutes preparation time + 30 minutes cooking time
Preparation
Place 2 tbsp of oil in a shallow pan and fry the pieces of chicken allowing them to cook for 5 minutes on each side until golden. Place the chicken on a paper towel and remove the fat from the pan. Fry the onions in the remaining 2 tbsp of oil for 5 minutes until golden then put the chicken back in the pan. Add salt and pepper, then leave to simmer gently for 5 minutes. Pour in the honey and wine, then the apricots cut into 4. Cover with a lid and continue to cook for a further 15 minutes. Serve with polenta. The flavor of the sweet ingredients makes this chicken dish quite unique.
