Ingredients:
4-5 tablespoons of fresh pesto, we love Thomas’ Village Grocer Fresh Pesto
4 zucchini, spiralized noodles
1 cup of cherry tomatoes, sliced in half
1 ball of Burrata cheese, drained, divided into 4 equal pieces
1/4 cup pine nuts, optional
Kosher salt
Freshly cracked pepper

Method:

Prepare the zucchini noodles with a spiralizer and cut into 6” long pieces with a knife or kitchen scissors.

Place a large frying pan or wok over medium to high heat and add 2 tablespoons of olive oil. When the oil is hot, add the tomatoes and softly sauté for 1 minute. Remove and set aside. Next add the zucchini noodles and sauté for 3-4 minutes until soft but al dente. Remove pan from heat and add the pesto. Gently toss to coat and season with salt and pepper.

Plate zucchini noodles in 4 bowls and top each bowl with cherry tomatoes (1/4 cup) and a piece of Burrata cheese. Garnish with basil leaves and a sprinkle of pine nuts.
