Easy to make! A Mexican version of the “Egg McMuffin”!
1-2 eggs, scrambled or fried
2-8 inch flour tortillas
2 strips bacon, cooked crisp and broken into pieces
1/4 cup (25g) cheddar cheese, shredded
1 green onion, thinly sliced, optional
salsa or ketchup
Cook eggs and set aside. Spray a large skillet with nonstick cooking spray. Place 1 tortilla onto the skillet and sprinkle half of the cheese, bacon and green onion on the bottom. Add the cooked eggs over top of the melting cheese, bacon and onion. Top the egg with the remaining cheese, bacon and onion. Place the other tortilla on top and press down with a flat spatula. Cook over low heat until the cheese has melted and is slightly brown on the bottom. Using the spatula, flip the tortilla over and continue to cook until cheese is melted and the bottom is golden brown.
Cut into 4 wedges.
Serve with your favourite salsa or ketchup.
