Rita is our senior cashier that many of you know. As she is always entertaining, here is a quick and easy traditional Italian dessert that Rita’s family is now sharing with us!

Ingredients:
6 cups espresso
1 shot Rum
1 shot Tia Maria (flavoured liqueur)
5 large eggs, separated
1 cup and 4 tablespoons sugar
1 teaspoon vanilla
475g Mascarpone
1 package Savoiardi cookies
unsweetened cocoa

Method:
Pour Coffee into a large pie plate, stir in run and 4 tablespoons of sugar, set aside to cool. In a large mixing bowl, whisk the egg yolks and one cup of sugar until frothy; add the mascarpone, vanilla and Tia Maria and blend until smooth. In another bowl, beat the egg whites to stiff peaks. Fold into mascarpone micyure until well blended and smooth. Dip the cookies very quickly into the coffee and line the bottom of a rectangular dish. Arrange half of the cookies so they completely cover the base of the dish. Cover the cookies with half of the mascarpone mixture. Arrange another layer of soaked cookies and top with the remaining mascarpone mixture. Cover and chill overnight. When ready to serve, spinkle the cocoa powder trough a fine sieve over the entire surface of the tiramisu!
