When we were kids, Thursday was piano lesson day. Doreen’s faithful Ford station wagon made the trek all the way to Bloor Street and back every week, my sister, Carol, weak with relief after the ordeal and Mike and I rambunctious and ravenous in the back seat! Back at home Mom (Doreen) would unlock the side door and then the familiar aroma of “Piano Lesson Night Casserole” would waft out to our waiting noses. Now that is a great childhood memory!

 

Ingredients:

1 cup onion, chopped                                       1 28 ounce can of tomatoes

½ cup green pepper, chopped                           1 teaspoon oregano

2 cups cheddar cheese, shredded

1½ pounds ground beef                                     salt and pepper to taste

1 clove garlic, minced                                       4 cups medium egg noodles, cooked

 

Directions:

Saute onions and peppers in a touch of oil until soft, then add beef and cook until browned. Add garlic and saute mixture a couple more minutes. Add tomatoes, oregano, salt and pepper and simmer for 20 minutes. Starting with the meat mixture, layer meat, noodles, cheese, meat noodles cheese and repeat until all ingredients are used up. Cover loosely with foil and bake at 325-350 degrees F, cover loosely with foil for 45 minutes.
