Ingredients:
¾ ground turkey
1 medium onion, chopped
3 garlic cloves, minced
chicken broth
1¾ cups water
1 can diced tomatoes, undrained
1 package cheese tortellini (about 9 ounces)
1 package fresh baby spinach, coarsely chopped
salt and pepper, to taste
shredded Parmesan cheese, optional
*add any other vegetables you like, think celery, carrot, and potato for starters

Method:
Crumble sausage into a Dutch oven; add onion. Cook and Stir over medium heat until meat is no longer pink. Add garlic; cook for 1 minute longer. stir in the broth, water and tomatoes. If you would like to add any other vegetables, this is when you would. Bring broth to a boil on slow/medium heat and make sure added vegetables are tender, if any. Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach. Cook 2-3 minutes longer or until spinach is wilted and tortellini are tender. Season with salt and pepper. Soup is ready. If desired, serve with sprinkled grated Parmesan cheese on top.
